Aunt Mary's Marinated Tomatoes

3 large tomatoes

1/3 cup olive oil

¼ cup red wine vinegar

1 tsp. salt

¼ tsp. ground pepper

½ clove garlic, finely chopped

2 Tbsp. snipped fresh parsley

1 Tbsp. fresh basil, finely chopped

2 Tbsp. onion, finely chopped

Slice tomatoes about 1/2” thick and place in single layer in shallow serving dish.  Mix oil, vinegar, salt, pepper and garlic; pour evenly over tomato slices.  Sprinkle with parsley, basil, and onion.  Cover and refrigerate 1 to 3 hours before serving.   NOTE:  You can also try grilling 18 (or so) plum tomatoes.  5 minutes on one side, 2 minutes on the other.  Remove from grill , place in bowl and toss with this marinade.  Then, chill for at least one hour.
